2094. RICE PILAF with SPINACH and BACON

makes 4 generous servings


1/4 cup butter
1 small onion minced
1 large oyster mushroom, chopped
1 cup uncooked rice
2 cups chicken broth
1 teaspoon salt
1/8 teaspoon pepper
1 colander full of fresh spinach washed and destemmed
4 slices cooked and crumbled bacon

Melt butter in medium saucepan add onion and mushroom. Saute until tender about 5 minutes. Add rice, stir in chicken broth. Bring to a boil. Add salt and pepper. Cover and reduce heat to simmer. Simmer for 15- 20 minutes. Remove from heat and stir in spinach. Put the lid on for a few minutes. The spinach wilts beautifully. Add bacon before serving.

Baby’s “Craz-E Burger” Special: A quarter…



Baby’s “Craz-E Burger” Special:

A quarter pound burger, with cheddar cheese, bacon, fries and a pickle. Served on a glazed donut, cut in half and grilled.

Available at Baby’s Burgers, State College, PA.

Popular with PSU students and those older people who laugh at saturated fat.

FWIW, the burger was delicious, and the sweetness of the donut added a little something. I wouldn’t do it everytime I ate a burger, though.

Seems that Russian boars have come over to our country and had their way with our feral lady pigs to produce super genetic monster pigs who are set on revenge!  Or something like that…

2093. BARBECUE BACON GRILLED CHEESE SANDWICH

makes one sandwich


2 slices Texas toast
2-3 tablespoons barbecue sauce
2 oz sliced sharp or smoked cheddar cheese
4-6 slices cooked bacon
1 oz shredded Monterey Jack cheese
butter or margarine

Heat a skillet over medium. Spread the barbecue sauce over the bread slices, then over one slice arrange cheddar cheese slices, bacon over that, then sprinkle the Monterey Jack over the bacon. Top with remaining bread slice. Melt some butter or margarine in the skillet and place the sandwich on top of the puddle, scooting it around until the bread absorbs the butter. Cook for 5-6 minutes or until cheddar looks melted, then remove and melt more butter in the pan, flip the sandwich and cook additional 4 minutes and serve hot.

Porky polenta breakfast

The sun was rather too bright when I woke up this morning, to quote Philadelphia Story*, and I was craving grease and grits, but there were none in the house (grits, I mean. There's plenty of grease.). In desperation, I grabbed a bag of fine ground cornmeal and made mush instead (1/4 cup cornmeal, 1 cup of water, cooked over medium heat with salt, stir to break up the lumps). Cornmeal mush is not as tasty as grits, not at all. So I added a bunch of pepper jack, which helped, but still, something was missing. So I forraged in the fridge and found a Garret County Chorizo sausage and a few strips of bacon and fried them up and dumped them on top. Genius. Like chirashi, except with pork and corn instead of fish and rice.

I didn't take a picture, because I was busy shoveling it into my mouth. But trust me, it was tasty. Though grits would have been better.

2092. BUTTER BEAN, LEEK and BACON SOUP

yields four servings


8 oz dried butter beans
4 oz smoked streaky bacon
2 tablespoons of oil
1 bay leaf
1 oz butter
1 onion finely chopped
1 leek cleaned, trimmed and finely chopped
2 small stick of celery finely chopped
1 garlic clove
1½ pints of water
5 fl oz milk
salt and freshly ground black pepper

Preferably soak the beans overnight by covering them with cold water and drain them before use.

Clean and finely chop the vegetables. Heat up one of the tablespoons of oil in a medium pan and cook the bacon for about 5 minutes till it is lightly crispy and golden brown. Add the bay leaf, 1½ pints of water to the pan along with the soaked butter beans. Bring the mixture to the boil then reduce the heat and simmer for approximately 25 minutes or until the beans are tender. Skim off any scum that appears on the surface. Heat the butter and the rest of the oil in another saucepan and add the remaining chopped vegetables. Stir well and coat everything in the butter and oil and cook over a low heat for about 10 minutes until they are soft. Tip everything into one pan and mix together well, throwing away the bay leaf. Next add the garlic, cover and simmer for a further 10 minutes until the beans and vegetables are really soft. Mash the beans against the side of the pan with a fork, this allows the beans to thicken the soup. Pour in the milk and season with salt and freshly ground black pepper and stir well. Serve immediately and sprinkle the top with freshly chopped parsley.

Move Over AXE There’s A New Spray In Town

You don’t have to watch much TV to have seen an AXE body spray commercial.  Just in case you have not seen an one I’ll let you know what they are like.  A boy sprays on some Axe and within seconds beautiful women are all over him.  Whether this works or not I have no idea because I don’t use this product.  It did however, inspire a Bacon Today reader to ask us this question.

Do you know of a fragrance that smells like bacon? For those gals still looking for a man this could hurry them to a happier side of life.  And for others I’m sure it just may be ticket to a happier sex life!
