Better with Bacon – Caramel Bacon Pecan Bark…

If it was my call as to what Better Half took to the holiday cookie exchange, this’d be it!

Sorry, too relaxed to write anymore,,,had me a 90 minute massage tonight!  So let’s just get right to the recipe…

Caramel Bacon Peanut Pecan Bark

Ingredients:

12 ounces maple or brown sugar bacon Two 12-ounce packages milk chocolate bits 1 1/2 cups chopped peanuts (salted or not) pecans 10-ounce bag soft candy caramels Large flake sea salt

Directions:

Line a baking sheet with waxed paper. Heat a large saute pan over medium-high. Working in batches, add the bacon and cook until very crisp, about 10 to 12 minutes. Transfer to paper towels to drain, then repeat with remaining bacon. Set aside to cool completely. Once cooled, crumble the bacon into small pieces. Place the chocolate bits in a medium microwave-safe bowl. Microwave on high for 1 to 2 minutes, stirring every 20 seconds, or until melted and smooth. Pour the chocolate onto the prepared baking sheet, then tap it on the counter to settle the chocolate into an even, smooth puddle. Immediately sprinkle the peanuts pecans and bacon evenly over the chocolate. Allow the chocolate to fully harden, about 15 to 20 minutes. Meanwhile, place the caramels in a medium microwave-safe bowl. Microwave on high for 1 to 2 minutes, stirring every 20 seconds, or until melted and smooth. Drizzle the caramel over the bark, then sprinkle lightly with the sea salt. Allow to cool and harden, then break into pieces.

Better with Bacon – Maple Bacon Cupcakes

In the few short weeks of this blogs existence, we have begun a few reoccurring “features” such as “Nerd News”, “Goin’ to the Market”, and “Makin’ Bacon”.  Today, we start something new…”Better with Bacon”.  “Better with Bacon” will call out a new recipe each week! I will be surfin’ the interwebs through my google machine to find what I deem as the tastiest of the tasty and then post them here each Tuesday.

To follow up on “Better with Bacon”, I am also introducing “Test Kitchen” where I get my behind into the kitchen and make one of the posted recipes.  This feature won’t have a set day due to my travel schedule at work, but I will try to feature something I made every two weeks.

So, let’s “officially” kick this off with:

Maple Bacon Cupcakes!!!

Maple Bacon Cupcakes
Makes 6 / 350F oven
4 1/2 tablespoons of butter, room temperature
1/2 tablespoon of bacon drippings (left in the fridge to become solid)
1 egg
5 tablespoons of brown sugar
4 tablespoons maple syrup
1 1/4 cup of self rising flour
1 teaspoon of baking soda
1/2 teaspoon of baking powder
tiny tiny pinch of kosher salt
1/4 cup of milk
1/4 cup of minced bacon, cooked and drained

Cook some bacon in a fry pan (about 6 thick strips). Reserve the drippings and place in the fridge to solidify. Mince 1/4 a cup of the bacon. The chef should eat whatever is left to assure that the bacon is tasty.

Beat the crud out of the butter and solidified bacon fat ’till light and creamy. Add the brown sugar and maple syrup and beat well until combined.

Add the egg and beat until incorporated.

Sift the flour, salt, baking soda and powder together.

Add some of the flour and mix, then some of the milk, then continue to alternate the dry and wet ingredients, ending with the dry. Mix until just combined. Fold in the bacon. Taste and add more maple syrup, flour, or milk if needed for desired taste. Keep in mind the maple frosting is very sweet, and to add in very small increments for alterations as maple syrup in large amounts can break a cake batter.Maple Syrup Frosting
4 tablespoons of butter
2 tablespoons of maple syrup
1 cup of powdered sugar
turbinado sugar (optional, but recommended)
coarse grain sea salt (optional, but recommended)

Combine the syrup and butter until combined. Add the sugar, a bit at a time, and whip at high speeds until combined. Pipe or spread onto cupcakes. Sprinkle on sea salt and turbinado sugar for decoration and a lot of added flavor.

Scoop into cupcake papers and bake at 350 F for 18-22 minutes or until a toothpick comes out clean. Be sure to rotate the pan after the first 15 minutes for even baking.

Bacon candies!

What did you think I meant?  REALLY?!? That’s what you thought? Get your mind out of the gutter.

Anywho, the fine folks at Archie McPhee have done it again.  There is nothing they won’t make taste like bacon!

These red and white striped hard candies look just like the ones that grandma used to put in her fancy candy dish for the holidays. But, my oh my, would grandma be in for a surprise if she popped one in her mouth!

Oh my indeed.

Better with Bacon – Crockpot Coq au Vin

If you are french, a french chef or fan of “Top Chef“ this may rub you the wrong way.

And as for bacon recipes this one may be a stretch…but the recipe does include bacon and crock pot cooking is supposed to be easy…

Crockpot Coq au Vin

Ingredients:

1 medium yellow onion, sliced 8 slices bacon, cut in pieces 2 1/2 pound chicken, cut-up 2 teaspoons garlic salt 2 teaspoons black pepper 8 baby red potatoes, scrubbed 2 cloves garlic, minced 3 tablespoons tomato paste 1 1/2 cups chicken broth 1 1/2 cups burgundy wine 1 (16 ounce) container whole mushrooms 1 1/2 cups frozen pearl onions Chopped parsley

Directions:

In large skillet, saute diced bacon and onions until bacon is crisp.  Remove from the pan and place on a plate.  Season chicken with garlic salt and pepper.  Add chicken pieces to skillet and brown well on all sides.  Whisk together tomato paste, bacon, onions, broth, wine and garlic.  Place potatoes in the crockpot.  Top with browned chicken.  Pour broth mixture into cooker.  Cover and cook on low 6 to 8 hours.  During last hour, add mushrooms and pearl onions and cook on high.  When serving garnish with chopped parsley.

Better with Bacon – Dina’s Candied Bacon Edition!

After the “all Charlie” post yesterday, I can across a series of Facespace messages from another long time FoTDB Dina (SHOUT OUT!).  Dina’s been a BIG supporter of this little blog and just after the New Year she sent not one but five, FIVE, recipes that included candied bacon.

Better with Bacon – Bacon Cantaloupe Bites

Seriously, if you screw this one up you need to stay the heck away from the kitchen!

Even though it may be elementary in nature, it’s still packs a lot of flavor!

Bacon Cantaloupe Bites Ingredients: 1 slice bacon 1/4 cantaloupe toothpicks

Directions:

Cook bacon in pan or microwave (using paper towels). Cut bacon and cantaloupe into 10 small pieces. Spear bacon and cantaloupe with toothpick.

Even More Choco-Bacon…

The Wisconsin State Fair also getting in on the chocolate covered bacon fair food craze.  Here’s the video to prove it:

TDB’s official list of choco-bacon has included the Florida State Fair, San Diego County Fair and Mississippi Valley Fair (Davenport, IA).  I sure there is more out there, but this is what I have been able to confirm through the interwebs!

I wonder if the Michigan State Fair will join the choco-bacon club??  If so, I actually might have to go this year.
