Bacon Stuffed Potato Balls

You can’t really go wrong with bacon, cheese and potatoes. Thrown these Bacon Stuffed Potato Balls in a deep fryer, and you’ve got an addictive appetizer that is perfect for your next football party. Double this recipe to feed a hungry crowd. Substitute your favorite cheese if you’re not a pepper jack fan. These taste fantastic on their own, or spice it up with the addition of your favorite hot sauce or spicy seasonings. Mmm!

1/4 lb ground pork
5 slices of hickory-smoked bacon, chopped
4 oz. pepper jack cheese, shredded
Instant mashed potatoes (6-7 servings worth)
2 eggs
1 cup flour
Hamburger seasoning to taste
Vegetable oil for frying
Garlic powder (optional)
Extra handful of shredded pepper jack cheese (optional)

Make 6-7 servings of mashed potatoes by following the directions on the box. If you like lots of flavor, add some garlic powder and a small handful of shredded cheese to the mashed potatoes. Then chill the potatoes for 1 hour in the fridge. May substitute cooked, fresh potatoes.

While the potatoes are chilling cook the bacon in a pan over medium heat then place on a plate with paper towels to absorb the extra grease, then chop into bits.

Brown the ground pork over medium heat and season the pork with hamburger seasoning. Once browned, drain the grease and put pork into a medium-sized bowl. Add the bacon bits and toss pork and bacon to mix well. Cover bowl with foil to keep warm and set aside.

In a small bowl, whisk together the 2 eggs. In another small bowl, combine the flour with some hamburger seasoning and mix well.

When ready to make your potato balls, toss in the shredded cheese with the pork mixture.

Pull out the chilled potatoes and form palm-sized patties. Spoon in a pile of pork and cheese mixture. Fold the edges over the filling to form a ball.

Heat a medium-sized skillet over medium heat and pour in vegetable oil so that there is about 2 inches of oil in the pan.

Dip the ball in the egg wash until completely covered, then roll in the seasoned flour.

Place balls in the pan and cook until the outsides are golden brown. Use a slotted spoon to remove balls from oil and serve immediately. Makes about one dozen large Bacon Stuffed Potato Balls.

This sweet and savory bread pudding recipe comes from Sessions Public in San Diego. It’s perfect for a Sunday breakfast or brunch! Sessions Public is a casual, charming neighborhood eatery with an ever-changing draft beer selection on the cusp of Ocean Beach and Point Loma in coastal San Diego. Opened in 2010 by San Diego native, Abel Kaase, the restaurant reflects the casual beach culture of its surroundings.

The restaurant’s eclectic selection of local and imported brews is paired with an approachable, yet creative menu with signature dishes such as Duck Fat Fries, Bacon Lollipops and Pork Belly Tacos. As a nod to the San Diego area code, happy hour is offered until 6:19 p.m. daily. Lunch and dinner are also available, as well as weekend brunch.

Bacon Waffle Bread Pudding

4 cooked waffles, cut into squares
6 strips of bacon (cooked and chopped)
1 cup eggs
2 cups cream
1 tsp. salt
1 tbsp. cinnamon
1 tsp. vanilla
1 cup brown sugar

Combine eggs, cream, salt, cinnamon, vanilla and brown sugar and mix until combined. Pour mixture over waffles and bacon in a greased 8” x 9” pan. Bake at 450 degrees for 1.5 hours. Garnish with chopped bacon and a mint leaf. Enjoy!

Night owls, rejoice! Jack in the Box’s new Munchie Meal items and Munchie Peel instant-win game were designed with you in mind. The Munchie Meal is only available after 9:00 PM, and includes 2 items with DELICIOUS BACON!

I sampled the Chick-N-Tater Melt Munchie Meal. This includes the new Chick-n-Tater Melt: crispy chicken, hash browns, bacon, Ranch dressing and an ooey gooey three cheese sauce, all on a buttery croissant. At first I was a bit baffled at the concept. Is it a breakfast sandwich? Is it lunch sandwich? Is it both??

I ordered mine with no Ranch, and was surprised at how tasty it was! The cheese sauce really made the sandwich, and the chicken and hash browns were extra crispy. And you can’t really go wrong when bacon and a croissant bun are involved. The Munchie Meal also came with 2 tacos, a soda and “halfise” fries, a 50/50 french fry/curly fry mix. It’s a ton of calories for a tiny price. You know, for people who have really worked up an appetite.

The cutesy box made it a little more apparent who the target market for the “munchies” meal is… “Couch Bingo” lets you play bingo from the comfort of your own sofa, which is apparently where the Munchie Meal is meant to be devoured!

Another bacony M.M option is the Loaded Nuggets meal. This item includes chicken nuggets covered in cheese sauce and bacon. If only the Hella-peno Burger and the Stacked Grilled Cheese Burger included BACON!!
