2554. PASTRAMI BACON MELT

serves two

1/4 cup mayonnaise
1/2 tablespoon horseradish
1 tablespoon hot sauce
2 tablespoons jalapeno peppers, diced
2 tablespoons (8 olives) Spanish manzanilla olives with minced pimento
4 tablespoons sweet pickle, diced
1/4 teaspoon fresh cracked pepper
6 slices bacon, cooked
1 tablespoon extra-virgin olive oil
8 slices (approx. 1/2 lb.) pastrami
1 tablespoon butter
3 oz. cheddar cheese, shredded
3 oz. Temptin cheese, shredded
4 slices extra sour rye bread

In a small bowl, mix all spicy spread ingredients together and set aside. (This can be made ahead of time and kept refrigerated.) Cook the bacon in a large nonstick skillet over medium heat until slightly crisp, about 8 minutes. Remove and drain on a paper towel-lined plate. Set aside to keep warm. In a medium-size sauté pan over medium heat, add extra-virgin olive oil and pastrami. Heat the pastrami thoroughly, approximately 4 minutes. Keep warm. Heat a large, flat grill pan over medium heat and melt butter. Lay the slices of bread on top of the butter then distribute the Temptin cheese on two halves and the cheddar cheese on the other two halves. Cook open faced until the cheese melts and the bread is golden, about 6 minutes.

What’s for Dinner? Onion Bagel with Candied Bacon & Creme Cheese

Candied Bacon Strips

These sweet and savory candied bacon strips can be used as a party snack, as a breakfast meat, or to build the world’s best BLT! Just make sure you make enough since these are sure to go fast. 

Makes 8 servings of Candied Bacon

Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes
Ingredients:

1 pound thickly-sliced center-cut bacon
1/4 cup packed brown sugar
2 tbsp maple syrup
2 tbsp rice vinegar
black pepper to taste

Preparation:
Place a wire cookie rack over a sheet pan and layout the strips of bacon in one layer. The strips of bacon can be touching, but shouldn’t be overlapping. Place in a preheated 350 degrees F. oven for 15 minutes.

Whisk together the remaining ingredients in a small bowl. Remove the bacon, and using a pastry brush, lightly brush the sugar mixture on the bacon, turn and brush the other side. Return to the oven and cook for 5 minutes.

Remove and repeat the process every five minutes, for about 30 minutes, or until the bacon is crisp and caramelized. Allow to cool on the rack until the bacon strips firm up.

Better with Bacon – Cheese and Bacon Snacks…

Look at our sweet ol’ grandma! Her name is Norma Pemberton and from what they report in Australia’s “Central Coast Express Advocate” she’s got quite a knack for cookin’ up cheese and bacon snacks.

Being the wonderful lady that she is, she’s shared the recipe with the paper and now, through the, I share it with you.

Cheese and Bacon Snacks

Ingredients

2 cups grated tasty cheese
1 cup self raising flour
1 small onion, finely chopped
3 bacon rashers finely chopped
1 tsp french mustard
1/2 cup milk
1 egg

Directions

Preheat oven to 190 degrees
Beat milk and egg lightly in a bowl.
Add remaining ingredients and mix until thoroughly combined.
Put 2 spoonfuls at a time on to a tray lined with baking paper
Place tray in oven and cook for 15 to 20 minutes or until brown.

Bacon and Corn Griddle Cakes

Ingredients:

8 slices bacon, cut into 1/2-inch pieces
1/3 cup finely chopped sweet onion
1 cup all-purpose flour
2 tablespoons chopped fresh chives
1 teaspoon baking powder
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
2/3 cup milk
1 large egg, beaten
1 tablespoon canola or vegetable oil
1 cup frozen, canned or fresh corn
1/2 cup shredded Monterey Jack cheese
warm maple syrup, for serving

WTH have we been?!?!

Bacon Jason has been keeping the bacon candles burning over on Facebook; hit us up at the link on the right. I have been spending my time in the service of the small island nation of Reduxia. But my sentence…err, I mean that job is over so hopefully we will be back in the swing of things.
