The Peanut Butter Bacon Banana Boat.

It’s the word “healthy” that made me laugh.  BTW, if you really dig the banana/peanut butter thing, go to the Twisted Spoke in Chicago and get the Elvis French Toast.  Yummy! and good for curing any issues from the night before ;-)

Anywho, recipe after the jump:Ingredients:

2 Hot Dog Buns
1 Banana
Peanut Butter
4 long strips of Bacon

Directions:

Open the hot dog buns and toast them. The bun tastes better if you toast it, but it isn’t absolutely necessary.

When the bun is toasted, spread some peanut butter on each side of the bun on both hot dog buns.

Fry the 4 long bacon strips until done and crispy. The crispier the better. Press a long piece of bacon into the peanut butter on each half of the bun. (Two strips per sandwich.)

Peel the banana and slice the banana lengthwise into two halves. One half for each sandwich.

Place a long banana slice in the middle of each of the two hot dog buns and close.

Pour a tall glass of cold milk and enjoy!

Makes 2 sandwiches.

Better with Bacon – Bacon Banana Cookies…

We are creeping up to the Christmas holiday and maybe you or someone you know still has a cookie exchange to attend prior to this Sunday.  Well if that is the case then I’ve got your blue ribbon, show stoppin’ recipe right here!

Bacon Banana Cookies!

Ingredients:

2 1/2 cups sifted all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1/4 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter
1 1/4 cups sugar
2 large eggs
1 teaspoon vanilla extract
4 bananas, mashed (about 1 1/3 cups)
1/2 pound bacon, cooked crisp, chopped

Like today for example…

I get my daily alerts from the Google Machine and notice an article from Marcus Samuelsson’s blog where he explains the different cuts of bacon.  It’s a good read as he talks through side, pancetta, slab, back, nitrate free…then I see something that makes me stop in my tracks:

Cooking with bacon can be a great way to add a little bit of flavor to a dish. You can chop some side bacon or pancetta and use it to enhance your favorite pasta, or in a banana bread or leave the strips whole and wrap them around fruits for a great appetizer like tapas or “Devils on horseback” or wrapped around oysters to make “Angels on horseback.”

Wait…back up…banana bread? Are…….you……kidding me?

Oh my!  Two and a half years with this blog and I have never seen a recipe like this, nor did I never think of adding bacon to banana bread. So simple, so tasty (with chocolate chips as well), GENIUS!
