Better with Bacon – Bacon Pear Pizza…

This popped up in the Google machine and just reading it made my mouth water.  I want to make this now!

It fits our motto: simple, quick, tasty, bacon.

Sweet Bacon and Pear Pizza…hit the jump for the recipe.

Sweet Bacon and Pear Pizza

Ingredients

Nonstick cooking spray
5 slices bacon
1/4 cup packed brown sugar
1/4 tsp. chili powder
1 pear, cored and sliced
1 tsp. lemon juice
1/2 of an 8-oz. tub cream cheese
1/4 cup chopped green onions
1 12-inch Italian bread shell (Boboli) or other pizza dough of your liking
1/3 cup chopped pecans
1/3 cup crumbled feta cheese
1/4 cup fresh basil
Honey (optional)

Directions

Preheat oven to 400 degrees F. Line bottom of rimmed baking pan with foil and spray with cooking spray. Arrange bacon slices on pan; set aside. In small bowl stir together brown sugar and chili powder. Generously sprinkle brown sugar mixture on bacon slices. Bake for 15 minutes or until browned; remove and set aside.
Increase oven temperature to 450 degrees F.
In small bowl toss together pear slices and lemon juice; set aside.
In medium bowl stir together cream cheese, onions, and black pepper to taste. Place pizza crust on clean baking sheet. Spread cream cheese mixture on crust.
Chop bacon and evenly sprinkle on cheese mixture. Arrange pear slices on bacon. Top with pecans and feta cheese.
Bake for 12 to 14 minutes or until cheese begins to brown. Sprinkle with basil and pass honey for drizzling.

Better with Bacon – Baked Jalapeno Bacon Poppers…

It’s been a while since we’ve actually had a recipe on here.  So long in fact, I forgot what I called these segments…

I think this is a good one for us to get back into the groove.  Simple, easy, tasty!  I think I will convience Better Half that we need for these at the party she’s throwin’.

Baked Jalapeno Bacon Poppers

Ingredients:

10 mini sweet peppers or jalapeno peppers
3 strips bacon
1 eight-ounce package cream cheese
1 cup shredded cheddar cheese
2 teaspoons Cajun seasoning (or your seasoning blend of choice)
2 tablespoons butter
1/2 cup panko bread crumbs or corn flake crumbs

Directions:

1. Preheat oven to 375F. Slice each sweet pepper in half lengthwise. Use your spoon to scoop out any seeds and some of the rib to make a nice, clean boat.

2. Cook bacon to crisp (you can use a microwave – place bacon between paper towels, microwave 3-4 minutes or until crisp). Mince cooked bacon. In a bowl, mix together the bacon, cream cheese, cheddar cheese and Cajun seasoning. Spoon cheese mixture into each sweet pepper.

3. Melt butter in microwave, stir in the bread crumbs. Hold each popper and dip cheese side down into bread crumbs. Bake 375F for 20 minutes or until cheese melty and bread crumbs crusty.

Better with Bacon – Corned Beef & Cabbage

In anticipation of St. Patrick’s Day, Bobby Flay was on “The Early Show” this morning with his spin on traditional corned beef and cabbage. Of note, his liberal use of bacon!

In fact his strategy of cooking the corned beef directly in bacon fat is something I think I am going to be trying when I cook up my next filet at the house…I’ll let you know how that works out.

Anywho, back to Bobby’s recipe. I was going to post but I fear the wrath of CBS Corporation so instead here is the video (which they allow to be embedded) and you’ll have to click on through for the recipes.

Better with Bacon – Bacon Pizza Bites…

Bacon Pizza Bites

Ingredients:

1 (12oz) can Pillsbury refrigerated biscuits
1/2 cup pasta or pizza sauce
1/4 cup shredded taco cheese
1/4 cup crumbled cooked bacon
1-2 scallions, sliced

Directions:

Heat oven to 400°F. Lightly grease cookie sheets.
Separate dough into 10 biscuits and flatten out to form a mini pizza crust; place on greased cookie sheets.
Top each mini crust with 1 teaspoon pizza sauce. Top each with desired toppings and cheese.
Bake at 400°F. for 7 to 9 minutes or until cheese is melted and biscuits are golden brown.

Better with Bacon – Cheesy Beef & Bacon Burger Meatloaf

From the “what doesn’t kill you will make you stronger” file comes this recipes for your enjoyment…

It’s Cheesy Beef & Bacon Burger Meatloaf.

Let me say that again…

CHEESY…BEEF….& BACON…BURGER MEATLOAF.

Your mouth is saying “Yum!”, your eyes are saying “Oh, good lord!” and your stomach is saying “Good luck!”

Cheesy Beef & Bacon Burger Meatloaf

Ingredients:

1 lb. bacon, crisply cooked, crumbled and divided
1 1/2 lbs. ground beef sirloin
1 1/2 c. shredded Cheddar cheese
2 eggs, beaten
1/3 c. dry bread crumbs
1/3 c. mayonnaise
1 T. Worcestershire sauce
1/2 t. salt
1/2 t. pepper
1/2 c. catsup
1/4 t. hot pepper sauce
3 T. Dijon mustard

Directions:

Set aside 1/2 cup bacon for topping. Combine remaining bacon, ground beef, cheese, eggs, crumbs, mayonnaise, Worcestershire sauce, salt and pepper in a large bowl; set aside.
Mix together catsup, hot sauce and mustard; set aside 3 tablespoons of mixture. Add remaining catsup misture to beef mixture; blend well.
Press into an ungreased 9″x5″ loaf pan; spread reserved catsup mixture over top and sprinkle with reserved bacon.
Bake uncovered at 350 degrees for 50 to 60 minutes or until done. Remove from oven; let stand 5 to 10 minutes before slicing. Serves 6 to 8.
