Better with Bacon – Bacon and Corn Griddle Cakes…

Bacon and Corn Griddle Cakes

Ingredients:

8 slices bacon, cut into 1/2-inch pieces
1/3 cup finely chopped sweet onion
1 cup all-purpose flour
2 tablespoons chopped fresh chives
1 teaspoon baking powder
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
2/3 cup milk
1 large egg, beaten
1 tablespoon canola or vegetable oil
1 cup frozen, canned or fresh corn
1/2 cup shredded Monterey Jack cheese
warm maple syrup, for serving

Better with Bacon – Dina’s Candied Bacon Edition!

After the “all Charlie” post yesterday, I can across a series of Facespace messages from another long time FoTDB Dina (SHOUT OUT!).  Dina’s been a BIG supporter of this little blog and just after the New Year she sent not one but five, FIVE, recipes that included candied bacon.

Peanut butter. Bacon. Burger??

My plans for Saturday already include a trip to Shake Shack to try the custard of the day: Pancakes & Bacon. I am all for bacon is desserts—bacon in anything really. Bacon is great on burgers. Bacon is great with peanut butter. But what to make of this very limited Shack offer (available this Saturday at the UWS location only): a peanut butter bacon burger? Could be interesting. Imagine beef satay sprinkled with bacon… that sounds tasty! But for some reason I just can’t see that combination being super awesome in a burger. And since I won’t be trekking all the way uptown, I guess I’ll never know.

Better with Bacon – Bourbon Bacon Pancakes…

What???????

You heard me.  BOURBON BACON PANCAKES!  Now bacon pancakes, sure, who hasn’t had them.  But BOURBON???  Come on!!

It’s my two favorite things added to my absolute favorite non-meat breakfast item.  Can you say WIN WIN WIN?  I can…

Recipe after the jump…make it for someone you love this weekend!

Bourbon Bacon Pancakes

Yields: about 8 to 12 regular pancakes or 2 to 3 dozen silver dollar-size pancakes

Ingredients:

1 1/4 cups unbleached all-purpose flour
1/4 cup rye flour
3 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/4 cups buttermilk
1/2 stick (4 tbsp) unsalted butter, melted
2 eggs
1 tsp vanilla extract
1 tbsp bourbon
Crumbled bacon, for topping

For the syrup:

1/2 cup maple syrup
1 tbsp bourbon

Directions:

In a large bowl, combine flours, sugar, baking powder, baking soda and salt.
Whisk in buttermilk, butter, eggs, vanilla and bourbon and mix until the batter is smooth and free of lumps.
Ladle 1/4-cupfuls of batter onto a hot buttered skillet and cook until bubbly.
Flip over and cook until a deep golden brown on the bottom.
To make the syrup, heat maple syrup and bourbon in a small saucepan until warm.
Pour over pancakes and use crumbled bacon for topping.

This weekend, while in Chicago, my group decided to have breakfast at the Original Pancake House.  Boy howdy!!!  That was some fine eatin’ (which I will post about as soon as I have the photographic evidence I need to visually confirm how YUMMY it was).

One of their menu items was Bacon Pancakes…

So in that spirit, I present to you this week, THIS recipe for your own hotcakes with sweet pork meat!

Bacon Pancakes

Ingredients:

Bacon
Pancake mix
Real maple syrup
Pam for Grilling
Orange slices (optional)

Directions:

First, cook your bacon. Try to cook the bacon as flat as you can  – later it will keep the pancake batter from oozing under the bacon and hiding it. Drain on paper towels and set aside.
Heat your griddle so it’s warming up. Mix your pancake batter as directed, but make it on the thinner side by adding more liquid. Transfer your batter into a Pyrex pouring cup so it’s easier to work.
Drip water on your griddle to see if it’s hot. If they bubble, you’re ready. Spray your hot griddle with Pam for Grilling. Break your cooked bacon into 1/2 inch pieces or so and place tightly together in a circle. Pour your pancake batter in a circle, starting outside in, and covering all the bacon pieces.
Cook until lightly browned and bubbling on the edges, a couple of minutes or so, and flip. Garnish with orange and enjoy with real maple syrup. Salty and sweet. Yum.
